Peach-A-Rine, Goat Cheese & Prosciutto Crostini

Peach-A-Rine.  Yes, say it with me … peach..a…rine.  Peaches and nectarines combined to form the perfect summer stone fruit. This 50/50 hybrid stone fruit is hardly fuzzy at all and sweeter than the two parent fruits.  Don’t blink because their season is short and it’s happening now until early September.

This fruit is so sweet, I either wanted to eat it as is or really fancy it up with a variety of flavors that could complement its syrupy goodness.

Taking the prosciutto wrapped melon to a new level, I’ve paired this summer delight with savory flavors such as goat cheese and prosciutto.  Give it a crostini “crunch” and you’ve got yourself a bite full of flavors and textures that your palate will be begging for more.  Lots more.

Peach-A-Rine, Goat Cheese & Prosciutto Crostini

Yield: 12

Ingredients

  • 12 Crostini breads
  • 2 ripe, Melissa's peach-a-rines
  • 6 tablespoons of goat cheese
  • 6 slices of prosciutto cut in half
  • honey
  • fresh cracked black pepper

Instructions

  1. Halve, pit and thinly slice peach-a-rines in wedges.
  2. Spread 1 tablespoon of goat cheese on each crostini bread.
  3. Place half a prosciutto slice over goat cheese.
  4. Drizzle with honey and sprinkle with fresh cracked black pepper.

Notes

You can make your own crostini by slicing ciabatta or french bread into 1/2" pieces, placing it on a baking sheet and drizzling with olive oil. Bake at 350 degrees for about 10 minutes until they become crispy and golden.

Peach-A-Rine. Sí, dilo conmigo … peach..a…rine. Son duraznos y nectarinas combinadas para crear esta fruta de verano perfectamente suculenta. Esta fruta de 50/50 híbridos es menos aterciopelada y más dulce que las dos frutas individuales. No parpadee! Su temporada es corta y está sucediendo ahora hasta el mes de septiembre.

Esta fruta es muy dulce, que me la quería comer tal cual, o con una variedad de sabores que podrían complementar su dulzura.

Tomando el melón envuelto en jamón serrano a un nuevo nivel, he combinado esta delicia de verano con deliciosos sabores como queso de cabra y jamón serrano. Déle lo crujiente de un crostini y tendrá  un bocadillo lleno de sabores y texturas que su paladar le rogara por más. Mucho más.
