A Rich and Spicy Street Food Favorite – Vasolote
Vasolote or esquites? Do you know the difference? It’s the variation of the cooking process that sets them apart. Esquites are prepared in a large clay pot with butter, sliced onions and epazote leaves. The combination is fried then corn kernels are added. The aroma is intoxicating and amazing. Once all the flavors are combined, the corn is served in a cup, topped with mayonnaise, cotija cheese, lime juice and chile powder. Toppings vary by region. I’ve seen some street stands in Mexico where people line the streets just to get a taste of esquites with bone marrow as a topping. Interesting, right?
Vasolote is a bit different. The flavor of the corn is preserved by boiling the corn kernels in salted water to al dente. The rest of the ingredients are served as toppings. One ingredient must be a spicy salsa or a spicy cream. I’ve seen some versions of spicy fried tortillas as a topping too. That sounds incredible. I never thought about adding a crunch factor to vasolote. The rest of the ingredients are similar to the esquites version: cotija, chilli powder and lime juice.

I decided to recreate my version of the vasolote. The spicy cream was inspired by makemealsthatdomore.com version of grilled street corn. The creamy spicy sauce includes lime zest, cilantro, jalapeño, Best Foods® Aocado Oil with a hint of Lime Mayonnaise Dressing, sour cream (or plain yogurt) and Knorr Caldo con Sabor de Pollo.

Ingredients
- 4 large ears of white corn, chucked (about 6 cups)
- 2 teaspoons Knorr Caldo con Sabor de Pollo, divided
- 1 tablespoon lime zest
- 1/3 cup fresh cilantro, finely chopped
- 1 jalapeño, finely chopped
- 1/4 cup Best Foods® Aocado Oil with a hint of Lime Mayonnaise Dressing
- 1/4 cup low fat sour cream or plain yogurt
- lime juice
- chile powder or chile seasoning
- cotija cheese or queso fresco, crumbled
Instructions
- Combine corn kernels and enough water to cover in a 6-quart stock pot. Bring to a boil, add 1 1/2 teaspoon Knorr, reduce heat and simmer for 15 minutes. Remove from heat and set aside.
- Combine lime zest, cilantro, jalapeño, mayonnaise, sour cream (or plain yogurt) and remaining 1/2 teaspoon knorr in a small plate. Stir until all ingredients have combined.
- Serve corn in a cup with a bit of water boiled. Top with mayonnaise mixture, a squeeze of lime juice, chile powder and cheese.
