Oh boy! Do you have soccer fever? We certainly do. We’ve been waking up early to cheer on our favorite teams and celebrate as much as we can.
This past Sunday, the game was extra special. It was the first game Mexico played in AND it was also Father’s Day. Needless to say, people had to be invited to share the celebration and that involves lots of food and snacks available all day.
I had an idea. Everyone loves brunch because in my opinion, brunch has no rules. You can have breakfast, lunch and dinner and be considered brunch. So I decided to host a crostini brunch bar and invite all the dads in my neighborhood.
This one was going to be a biggie. What do you feed a large group of people with only $40 to spend? I was up for the challenge, searched the store locator and headed to ALDI.

My menu consisted of fresh fruits and veggies. Smoked Salmon, scrambled eggs, spreadable cheese, aged cheddar, baked French baguette roasted mushrooms, a medley of green and Kalamata olives . For those of us with a sweet tooth, I had a trail mix of dried fruits and nuts, ALDI’s gourmet dark chocolate (my favorite!) and apricot preserves. I even included an avocado, onion and tomato tray to depict the Mexican flag. It’s all about the details and my subtleness of what team I wanted to win. The grand total was $39.29! Unbelievable! I did a price comparison and would’ve paid $93.28 at the leading competitor. I saved $53.99!
ALDI cares so much about the freshness of the fruits and veggies that they offer. They work with farmers and local growers to ensure the vegetables arrive from the field to the store in the shortest possible time. Even within a couple of days. Now, that’s fresh!

Ingredients
- 2 French baguettes, sliced
- olive oil
- 1 dozen eggs
- 2 cups baby bella mushrooms, sliced
- 1 large yellow onion, sliced
- 2 cups tomatoes, chopped
- 1 pint strawberries
- 1 cup blueberries
- 3 ounces smoked salmon
- 1 large avocado
- apricot jam
- 2 apples sliced
- 1 cup mixture of green and Kalmata olives
- dark chocolate
- 1 (8-ounce) package cream cheese
- 1 cup aged cheddar, sliced
- 1 1/2 cups trail mix
- Light citrus beer
Instructions
- Preheat oven to 350° F
- Line two large baking sheets with foil. Brush olive oil on both sides of baguette slices and arrange on baking sheets. Bake for 30 minutes turning bread slices at the halfway point.
- Heat 2 teaspoons olive oil in a large skillet over medium heat. Pour eggs, stirring with a rubber spatula until set. Set aside and keep warm.
- Heat 1 tablespoon olive oil in a small skillet over medium heat. Add mushroom slices, season with salt and pepper and cook until mushrooms are tender. Set aside and keep cool.
- Heat 1 tablespoon olive oil in medium skillet over medium heat. Add onion slices and jalapeños, season with salt and pepper and cook until onion is tender and jalapeño are slightly roasted.
- Arrange crostini on a large board or tray. Arrange eggs and mushrooms on serving trays or bowls. Place onions and jalapeños on a narrow tray along with avocado and tomatoes Place the remaining items around the crostini. Serve with a citrus or light beer.
