Minty Clementine Pineapple Agua Fresca

The winter season is a very busy time in our household.  I spend lots of time in the kitchen developing holiday recipes.  Desserts abound the counters of my kitchen and take up pretty much every single nook and cranny of my refrigerator and kitchen space.  Besides my busy cooking schedule, we have holiday shopping, homework duties, volunteer hours to fulfill and classroom parties to plan.  Healthy snacks are of the essence and I’m thankful for the giant bowl of Cuties in my kitchen to help us through the season.

Cutie Clementines are at their peak during the holidays and can be included in just about any fun kid activity, craft, holiday gift and recipe.  They are small enough to be carried around by little hands and distributed as a snack for recess or field trips.  They are seedless and peel easy.  No mess!

Cuties also make great stocking stuffers and juicy additions to green salads, fluffy marshmallow dessert fruit salads and gelatins. And, what child doesn’t love Cuties in their lunch box?  My kiddo certainly does.

We’ve included Cuties in just about everything except a drink.  I changed that this year and I prepared a refreshing minty clementine pineapple agua fresca to enjoy during homework time.  The recipe only requires 4 ingredients and it’s simple enough to prepare a few minutes before a meal is served.  My son looks forward to this drink and starts talking about it as soon as he jumps in the car at after school pick-up.

Minty Clementine Pineapple Agua Fresca

Yield: Serves 6

Ingredients

  • 8 Cuties, juiced (about 2 cups)
  • 2 cups pineapple juice
  • 1/4 cup honey
  • 10 mint leaves plus more for garnish

Instructions

  1. Place ingredients in a blender container with 2 cups of water. Blend until all ingredients have mixed well and mint leaves have completely been blended. Serve immediately and garnish with mint leaves. Can be served over ice if desired.
