Ingredients
- 1 large cauliflower, roughly chopped
- 2 tablespoons onion, finely chopped
- 1 garlic clove, finely chopped
- ½ cup cheddar cheese, finely shredded
- 1 egg yolk
- ¼ teaspoon pepper
- ¼ cup rolled oats
- ½ cup seasoned bread crumbs
- 2 tablespoons olive oil
- 1 egg beaten
Instructions
- Place cauliflower florets in a medium saucepan with enough water to cover over medium heat. Cook for approximately 5-7 minutes or until cauliflower is al dente; drain. Place cooked florets in a food processor until it resembles pieces of broken rice. Transfer cauliflower “rice” to paper towels and squeeze out any excess liquid. Transfer to a medium bowl.
- Preheat AirFryer to 390° F.
- Combine cauliflower “rice”, onion, garlic, cheese, egg yolk and pepper. Toss with fork to mix well.
- Combine oats, bread crumbs and olive oil in a separate medium bowl. Toss with a fork to mix well. Mixture should resemble wet sand.
- Place 2 tablespoons of cauliflower mixture in the palm of your hand. Shape into a patty, brush with beaten egg on both sides and cover with breadcrumb mixture.
- Place patties, 4 at a time in AirFryer basket. Set timer for 6 minutes and bake patties. Flip patties and set timer for 6 minutes again and bake until golden brown.
- Serve with ketchup or your favorite dipping sauce and enjoy.
