Cinnamon Pecan and Cereal Smoothie with Amaranth

School is back in session for us and my thinking cap for creative breakfast ideas is back on.  Keeping the most important meal of the day fun and quick takes some serious brain power on top of the stress back to school brings upon us.  I grew up drinking “licuados” and “ponches” with milk, bananas and chocolate flavored powdered.  It was a beverage my mom made that couldn’t go wrong with the kids.  It was delicious and hearty enough to hold us over until lunch time.

Cinnamon Pecan and Cereal Smoothie with Amaranth

Yield: Makes 2 servings

Ingredients

  • 1 banana, ripe
  • 1 cup coconut or almond milk
  • 1 7-ounce Cacique Yogurt Smoothie, Pecan with Cereal flavor
  • 1 teaspoon ground cinnamon
  • 1 cup ice
  • 1/4 cup popped amaranth

Instructions

  1. Place all ingredients except amaranth in a blender container and blend until smooth.
  2. Serve, top with popped amaranth and enjoy.
