Guacamole, Queso Fresco and Pickled Jalapeño Toast

One of  the highlights of my last trip to Mexico was visiting their new soccer stadium and enjoying the game from the stands.  I heard that attending a Mexican soccer game live was the ultimate experience and a must if you have the opportunity, patience and luck to score a ticket.

As part of the fan experience, we were told that one must take their own food and feel free to share with neighboring fans.  This made the game comradery 100 times more fun.  Our stadium treat of choice was guacamole, queso fresco and pickled jalapeño tortas.  Our family prepared over 20 and just as word got around, they were gone in just a few minutes.

Our tortas were traded for other stadium fan shareables. Tamales, taquitos, sandwiches, fruit and churros it was a stadium feast. Those tortas were so popular, we had game attendees from other seat sections stop by for a chance to trade one.

I decided to recreate that memorable day with a trendy twist.  Avocado toast is all the rage in the food world at the moment so I created my toast version of that unforgettable game day torta.  Sabra just released a new line of guacamole fusions, so what better way to incorporate a guacamole filled with veggies that the entire family can enjoy?

Toast 2

Guacamole, Queso Fresco and Pickled Jalapeño Toast

Yield: Makes 4


  • 4 pieces whole wheat bread, toasted
  • 1/4 cup Sabra Veggie Fusions Garden Vegetable Guacamole
  • 7.76 ounce can pickled jalapeño peppers with sliced carrots, sliced
  • 1/2 cup queso fresco, crumbled
  • freshly cracked black pepper


  1. Spread approximately 2 tablespoons of guacamole on each piece of toast.
  2. Top with sliced pickled jalapeño and sliced carrots.
  3. Sprinkle with 2 tablespoons of crumbled queso fresco.
  4. Serve immediately.
