I’ve been looking forward to start enjoying aguas frescas and paletas all year long and now the time has come. For my first refreshing recipe of the season, I present to you pineapple thyme agua fresca.
Because pineapples are easy to come by, whether it’s ripe and fresh or canned in your pantry, this cool drink is the perfect thirst quencher at any time of the day.
Infused with just a touch of thyme and lime, the acidic but sweet nature of the pineapple balances perfectly with the floral hints of thyme sprigs and citrus tang of lime.
When feeling adventurous, I’ve been known to turn this beverage up a notch and splash a bit of vodka into the mix, blend with ice and enjoy my quick version of an adult pineapple slushy.

- 8 fresh thyme sprigs, divided
- 1 large pineapple, peeled and cut into 1-inch pieces
- 4-6 cups water
- ¼ cup sugar
- ¼ cup lime juice
- Combine leaves of 4 thyme sprigs and pineapple in blender container. Blend until smooth.
- In a large pitcher, add pineapple mixture, water, sugar and lime juice. Stir and serve over ice. Garish with remaining thyme sprigs.
If you prefer less pulp, run pineapple mixture through a fine sieve to remove pulp.
