In light of Oscar Mayer’s birthday on March 29, I decided to create a light, spring time soup with flavorful ingredients. Tangy soups with just a bit of lemon zest, lemon juice and leafy greens screams fresh and satisfying. Because hearty potato dishes served around this time of the year, like shepherd’s pie, and other Irish recipes, this mouthwatering soup is a quick lunch that will let you leave room for those St. Patrick’s Day celebration dishes.

The balance of the peppery kale flavor, citrusy lemon and savory ham, make this delicious recipe an all-round perfect dish. Served it as an appetizer or as a full meal, your family will love it. If wild rice is not available to you, substitute with white rice, potatoes or quinoa. Lentils and chickpeas are a great addition too. Make it your own and give it that wonderful ham flavor that make this soup unique.
