When I was in college, I was the epitome of the worst breakfast eater. Since I was always on the go. In and out of early morning classes, I would head off to work and next thing you knew, it was lunch time. I had completely missed breakfast. I felt tired with a brain fog and famished. I would eat just about anything by that time and yes, I reached for the junk food or office pastries that were readily available to me. I was that 50% from the infographic below that skipped breakfast regularly. Can you believe that research shows that 50% of social media users who tweet in Spanish, skip breakfast?
When I was pregnant with my son, I nourished myself the best I could. I made time for breakfast, lunch, and dinner. Took my vitamins ate healthy snacks, drank lots of milk and avoided junk food. Forward to today: I continue to nourish my body with a good breakfast because it is the time I get to bond with my son. It’s the only time I get to talk to him in the morning before our busy day begins. We discuss school projects, future weekend plans and just joke around. It’s my favorite time of the day and there is always milk involved.
To avoid him falling into the pitfall of not eating a healthy breakfast, I’ve followed some simple tips on keeping this very important routine going; even on busy days.
– If I know I will be in a rush that week, I make breakfast casseroles. I soak pieces of French bread in egg and milk and add potatoes, chorizo and onions. I bake on Sunday, store it in individual pieces, freeze and I’ve got a hearty breakfast ready. We just reheat.
– Alway keep a portable cup with lid handy. Keep it ready to go in the refrigerator. Grab and go. Add chocolate milk, blended bananas or strawberries for a milk shake your kids will love. It’s a nice surprise on that first sip.
– Make oatmeal ahead of time. Store it in a plastic container in your refrigerator and just reheat and add cold milk. Make it fun with tasty ingredients such as peanut butter, jelly and pecans to add variety to your morning. The possibilities are endless and milk makes it taste delicious.
By preparing for shortcuts in the kitchen ahead of time and being creative, breakfast can become your favorite meal of the day once again. What are your breakfast tips? I would love to know.

Cuando estaba en la universidad, tenia el peor habito de no desayunar. Ya que estaba siempre a carreras, entraba y salía de las clases de la mañana, me dirigía al trabajo y de pronto ya era la hora del almuerzo. Me había perdido por completo el desayuno.
Me sentía cansada con una niebla del cerebro y hambrienta. Me podía comer casi cualquier cosa en ese momento y sí, si se me presentaban los pastelitos de la oficina y comida chatarra, eso comía. Yo era parte de ese 50% de esa infografía que brinca el el desayuno con regularidad. ¿Puedes creer que la investigación muestra que el 50% de los usuarios de medios sociales que twitean en español, no desayunan?
Cuando estaba embarazada con hijo, me alimenté lo mejor que pude. Hice tiempo para el desayuno, el almuerzo y la cena. Tomaba mis vitaminas, comía meriendas saludables, bebía mucha leche y evitaba la comida chatarra. A la actualidad: Sigo nutriendo mi cuerpo con un buen desayuno, ya que es el momento de todos los días cuando platico con mi hijo. Es la única vez que tengo la oportunidad de hablar con él por la mañana antes de que comience el día ocupado. Platicamos los proyectos escolares, planes futuros de fin de semana y bromeamos. Es mi momento favorito del día y siempre tenemos nuestro vaso de leche al lado.
Para evitar caer en asa trampa de no comer un desayuno saludable, he seguido algunos consejos simples sobre el mantenimiento de este importante curso de rutina, incluso en días mas acarreados.
– Si sé que voy a estar de prisa esa semana, hago cacerolas de desayuno. Empapo piezas de pan francés en el huevo y leche y añado las papas, chorizo y cebolla. Horneo el domingo, la guardo en piezas individuales, congelo y tengo un buen desayuno preparado. Nada mas recalentamos.
– Siempre mantenemos una taza portátil con tapa a mano. Tenla lista en el refrigerador llena de leche. Es rápido y fácil. Agrega la leche con chocolate, plátanos o fresas mezcladas para variar y a tus hijos les encantará. Es una agradable sorpresa en el primer sorbo.
– Haz avena con días de anticipación. Guárdala en un recipiente de plástico en el refrigerador y simplemente recalienta y añade la leche fría. Agrega ingredientes divertidos como la mantequilla de maní, mermelada y nueces para mas variedad a tu mañana. Las posibilidades son infinitas y la leche le da un sabor delicioso.
