Natilla Zacatecana is a traditional Mexican custard served in Zacatecas, Mexico. Similar to the Spanish version, this recipe is comprised mostly of milk and eggs. The traditional version calls for chopped pecans but I decided to add a bit more texture to this creamy dessert by adding popped amaranth.
Making natilla is easy. the only tricky part is to stir the milk mixture constantly as it is heated to avoid sticking and burning to the pot. Burning a teeny-tiny bit of the milk can result in a hint of cajeta flavor in your dessert, so it might be a good thing (*wink, *wink).
This dessert is kid friendly all around. I shared this dessert with my son and he could not get enough of it. He loves anything with milk and crunchy amaranth.

Ingredients
- 1 14-ounce can sweetened condensed milk
- 1 12-ounce can evaporated milk
- 1 cup whole milk
- 4 eggs
- 1/2 cup pecans, chopped
- 1/3 cup popped amaranth
Instructions
- In a large mixing bowl, whisk to combine milks and eggs.
- In a large saucepan over medium heat, heat milk and egg mixture. Stir constantly until mixture thickens; approximately 10 minutes.
- Let cool for 20 minutes, pour in serving cups and refrigerate for a minimum of 1 hour. Sprinkle with chopped pecans and amaranth.

La Natilla Zacatecaa es una natilla tradicional mexicana que se sirve en Zacatecas, México. Al igual que en la versión española, esta receta se compone principalmente de leche y los huevo. La versión tradicional requiere de nueces picadas pero decidí añadirle un poco más de textura a este postre cremoso con un poco de amaranto.
Hacer natilla es fácil. la única parte que necesita mucha atención es al revolver es la mezcla de leche constantemente a medida que se calienta para que no se pegue y se queme y pegue quema a la olla. Quemando un poquito la mezcla puede resultar en un toque de sabor cajeta en tu postre, por lo que podría ser una buena cosa.
Este postre es adecuado para niños en todos los aspectos. Compartí este postre con mi hijo y se adueño de el. Le encanta todo con leche y el amaranto crujiente.

Natilla Zacatecana con Amaranto
rinde 4 porciones
Ingredientes
1 lata de 14-onzas de leche condensada
1 lata de 12-onzas de leche evaporada
1 taza de leche entera
4 huevos
1/2 taza de nueces picadas
1/3 taza de amaranto reventado
Instrucciones
En un tazón grande, bate las leches y los huevos.
En una cacerola grande a fuego medio, vierte la mezcla. Revuelve constantemente hasta que la mezcla se espese, aproximadamente 10 minutos.
Dejar enfriar durante 20 minutos, sirve en copas y refrigera por el mínimo de 1 hora. Espolvorea con las nueces picadas y el amaranto.
