As a teenager, good portions of my summer vacation were spent in Mexico. If I wasn’t helping my grandmother cook, I was being taught crochet by my aunt, who was an expert at it. One summer in particular, I was busy perfecting my double crochet stich, when all of a sudden my aunt scurried across the dining room into the kitchen. I followed. Concerned with her hastiness in the kitchen, I asked her if everything was ok.
She looked at me with a worried expression and said that she had forgotten it was her turn to host the crochet club her and her friends organize on a weekly basis. She grabbed her worn recipe book with the broken spine, opened the refrigerator door and grabbed a package of PHILADELPHIA Cream Cheese and a few other ingredients.
In a matter of minutes, she had created a tray of beautiful honey-sweetened bruschetta appetizers for her and her friends to enjoy with a cup of tea. To make this delicious appetizer even more impressive, she topped them with edible flowers and mint leaves from her garden.
Since then, I love making this quick and easy recipe for my friends on impromptu gatherings. It goes well with light, layered salads, spring and summer zucchini dishes and even a perfect ending to hearty ground beef recipes such as an enchilada casserole or a beefy lasagna. It’s also the perfect picnic recipe or the ideal snack when you’re in the mood for something sweet.
Edible flowers can be difficult to find. If they are not available at your local store, try ordering them online or replace them with crunchy green apples or fresh sliced peaches. The honey-sweetened cream cheese compliments just about any flavor profile it is paired with.
Ingredients
- 10 slices of French baguette
- ¼ cup olive oil
- 1 (8 ounce) package PHILADELPHIA Cream Cheese, softened
- 2 tablespoons honey
- 2 tablespoons half-and-half
- 2 cups strawberries, hulled and chopped
- ¼ cup sugar
- assortment of Melissa's Produce edible flowers
- mint leaves
Instructions
- Preheat oven to 350° F.
- Place bread slices on an ungreased baking sheet; lightly brush with olive oil. Bake for 7-10 minutes or until lightly browned. Remove from heat and let cool.
- In a small mixing bowl, beat cream cheese with electric hand mixer. Continue mixing and gradually add honey and half-and-half until smooth.
- In a small saucepan over medium heat, combine strawberries and sugar. Stir until mixture releases liquid and begins to bubble. The mixture will thicken; approximately 5-7 minutes. Remove from heat and let cool.
- To serve: Spread sweetened cream cheese on bread slices, top with edible flowers, mint leaves and a side of strawberry compote.

Cuando era adolescente, pasaba una gran parte de mis vacaciones en México. En ese transcurso, se crearon muy bonitos recuerdos. Cuando no estaba ayudando a mi abuelita a cocinar, mi tía me enseñaba a tejer porque ella era una experta en crochet. Desde entonces, me encanta hacer esta receta rápida y fácil para mis amigos en reuniones improvisadas. Va bien con ensaladas ligeras, platillos con calabacitas e incluso un final perfecto para recetas de carne molida muy llenadoras, como un pastel azteca o una lasaña. También es la receta perfecta para un día de campo o para la merienda ideal cuando uno tiene ganas de algo dulce.
Las flores comestibles pueden ser difíciles de encontrar. Si no están disponibles en el supermercado, se pueden ordenar por internet o reemplazarlas con manzanas verdes crujientes o rebanadas de duraznos frescos. El queso crema endulzado con miel es un balance para cualquier sabor.
Bruschetta de Queso Crema Endulzada con Miel Compota de Fresas y Flores Comestibles
10 rebanadas de baguette francés
¼ taza de aceite de oliva
1 (8 onzas) de queso crema PHILADELPHIA, ablandado
2 cucharadas de miel
2 cucharadas de crema (o half and half)
2 tazas de fresas, picadas
¼ taza de azúcar
surtido de flores comestibles de Melissa’s Produce
hojas de menta
Instrucciones
Precalienta el horno a 350 ° F.
Coloca las rebanadas de pan en una bandeja para hornear sin engrasar; pincelea ligeramente con aceite de oliva. Hornea durante 7-10 minutos o hasta que estén ligeramente dorados. Retira del horno y dejar enfriar.
En un tazón pequeño, bate el queso crema con una batidora de mano eléctrica. Continua mezclando y agrega poco a poco la miel y crema hasta que esté suave.

Para servir: Unta el queso crema endulzado sobre las rebanadas de pan, cubre con flores comestibles, hojas de menta y acompaña con compota de fresa.
