Can you tell I’m pretty excited about Independence Day? I’ve been having way too much fun testing red, white and blue desserts for our July 4th celebration picnic. We usually spend the day at the beach and wait until the sun goes down to watch the spectacular fireworks display over the ocean. I’t pretty special.
This weekend, I experimented with various gelatin flavors to create a red,white and blue themed dessert for that special day. I used strawberry flavored gelatin for the red layer, berry blue flavored gelatin to make the bright blue layer and In Delight Sweet Cream coffee creamer with unflavored gelatin to make the delicious white creamy layer. Sweet Cream is inspired by sweet Cold Stone vanilla ice cream. Perfect for my white creamy layer!

Ingredients
- 1- 3oz package of strawberry flavored gelatin
- 1 cup boiling water
- 1 cup cold water
- 1 tablespoons (2 envelopes) unflavored gelatin
- 2 cups In Delight Sweet Cream coffee creamer
- 1- 3oz package of berry blue flavored gelatin
- 1 cup boiling water
- 1 cup cold water
Instructions
- In a medium mixing bowl, add 1 cup boiling water to strawberry gelatin mix, stir 2 minutes until completely dissolved.
- Stir in 1 cup cold water until combined.
- Pour mixture in a 9"x13" glass dish
- Refrigerate until set. Approximately 1 hour.
- In a medium saucepan, over medium heat boil creamer. Remove from heat and add unflavored gelatin. Stir until gelatin has dissolved.
- Gently pour white creamy mixture over red gelatin layer. Refrigerate until set. Approximately 1 hour.
- Meanwhile, in medium mixing bowl, add 1 cup boiling water to berry blue gelatin mix, stir 2 minutes until completely dissolved.
- Stir in 1 cup cold water until combined.
- Pour the berry blue mixture over white layer. Refrigerate until firm. Approximately 3 hours.
- Using a small knife, cut gelatin in squares. Gently lift them out of the glass dish with a spatula and place them in a serving dish.
