Ever have one of those "why me?" days. From the time you wake up late in the morning, you stub your toe on the bed post (&%!*@!), ther's no hot water, street lights not working, surprise report due at work in 30 minutes. While you're at it, you spill some coffee on your crisp white shirt and the coffee stain has an obscene shape.
sigh...
You know what makes me feel better? Lentils. An extra-huge bowl of brothy lentils. Like a big group hug from my hubby and son...with turkey ham.
I almost feel guilty eating them because they are so filling, and addicting like "I can't get enough" addicting. Who knew soup had such an effect on me?
Lentil Soup
Ingredients
- 1tbsp vegetable oil
- 2, diced shallot cloves
- 2 large gold Yukon Idaho Potatoes
- 2 large tomatoes
- 4 cups spinach leaves
- 2 cups turkey ham
- 8 cups water
- 2 cups dry green lentils
- 3 bay leaves
- pinch salt
- 1/2 tsp dried thyme
In a large pot, sauté the diced shallot in vegetable oil for 2 minutes until soft. Add water, lentils, thyme, bay leaves and pinch of salt.
Reduce heat to a simmer. Add ham, potatoes and tomatoes. Cover and cook until lentils are soft, about 30 minutes. Remove bay leaves and stir in spinach leaves before serving.

Todos tenemos esos días de "por qué yo?". Desde el momento en que te despiertas tarde en la mañana, te golpeas el dedo gordo en el poste de la cama (&%!*@!), no hay agua caliente al bañarte, los semáforos en la carretera no funcionan, tienes que entregar un reporte a tu jefe en 30 minutos. Mientras estás en ello, se te derrama el café en tu camisa blanca y la mancha de café tiene una forma obscena.

¿Sabes lo que me hace sentir mejor? Lentejas. Un tazón extra-grande de lentejas, llenador y caldoso. Como un gran abrazo en grupo de mi esposo e hijo ... con jamón de pavo.
Casi me siento culpable de comerlas porque te satisfacen, y son adictivas como "no puedo comer solo un plato" adictivo. ¿Quién sabía que la sopa tenia ese efecto a mí?
Sopa de Lentejas
Ingredientes
- 1tbsp aceite vegeal
- 2 dientes de chalotes, picados
- 2 papas grandes Yukon de Idaho
- 2 tomates grandes
- 4 tazas de hojas de espinacas
- 2 tazas de jamon de pavo
- 8 tazas de agua
- 2 tazas de lentejas verdes, secas
- 3 hojas de laurel
- 1 pizca de sal
- 1/2 cucharadita de tomillo seco
Instrucciones
En una olla grande, sofría la chalota picada en aceite vegetal durante 2 minutos hasta que estén blandas. Agregue el agua, las lentejas, el tomillo, el laurel y pizca de sal.
Reduzca el calor a fuego lento. Agregue el jamón, las papas y los tomates. Tape y cocine hasta que las lentejas estén blandas, aproximadamente 30 minutos. Quite las hojas de laurel y agregue las hojas de espinaca antes de servir.
