I call mole “love concoction.” It takes love and passion to prepare this tantalizing treasure of a sauce. An authentic mole recipe calls for over 30 ingredients and 12 hours to prepare. Ingredients must be ground, mixed and blended by hand. Carefully roasted to the last stage right before considered burned, without reaching that point. It must be consistently watched, stirred, monitored and taste tested. The finished sauce can be enjoyed poured over turkey, chicken, seafood, potatoes or just on plain white rice and scooped with corn tortillas. My favorite way to enjoy this Mexican dish.
I was recently invited to the Nestlé Test Kitchens in Glendale, California and was given the challenge to make enmoladas. I jumped at the opportunity when I heard that Nestlé had an enmoladas recipe that took less than 30 minutes to prepare and cook. I really had to try it for myself. The result: A flavorful, chocolatey dish with the right amount of spicy kick. One of the best time-saver recipes I’ve ever experimented with.

Enmoladas de la Abuelita
Preparation Time: 20 mins
Cooking Time: 5 mins
Ingredients
1 cup water
1 packet (3.98 ounces) MAGGI Sofrito Seasoning Paste (tomato, garlic, onion)
2 chipotle chiles in adobo sauce from a can, seeded if desired
2 tablespoons canned adobo sauce from the chipotle chiles
1 tablespoon MAGGI Granulated Chicken Flavor Bouillon
1 tablet (90 grams) NESTLÉ ABUELITA Chocolate tablet
2 tablespoons vegetable oil
8 large corn tortillas
2 cups crumbled panela cheese
Toasted sesame seeds
Chopped onions
Chopped fresh cilantro
Directions
PLACE water, sofrito, chipotle chiles, adobo sauce and bouillon in blender; cover. Blend until smooth.
PLACE mixture in large saucepan. Add Abuelita chocolate. Cook, stirring frequently, over medium-low heat for 5 minutes or until chocolate has dissolved completely and sauce has thickened. Set aside; keep warm.
HEAT oil in large skillet. Fry tortillas one at a time for 2 to 3 seconds to soften. Drain tortillas on paper towels. Dip tortillas in Abuelita mixture.
FILL dipped tortillas evenly with cheese; roll and place in serving dish. Pour remaining Abuelita sauce over tortillas. Sprinkle with sesame seeds and top with onion and cilantro; serve immediately.

Para preparar el mole se necesita amor y pasión. Una auténtica receta de mole se requiere más de 30 ingredientes y 12 horas para prepararse. Los ingredientes deben ser molidos y mezclados a mano. Se cocina cuidadosamente hasta casi llegar al punto de quemarse pero sin llegar a ese extremo. Debe ser vigilado constantemente, revolver y probar hasta la perfección. La salsa de mole se puede disfrutar sobre pavo, pollo, mariscos, papas o simplemente en arroz blanco con tortillas de maíz. Mi manera favorita de disfrutar de este platillo mexicano.
Recientemente fui invitada a las cocinas de Nestlé en la ciudad de Glendale, California, y me retaron en hacer enmoladas. Yo aproveché la oportunidad cuando me enteré de que Nestlé tiene una receta de enmoladas que se tarda menos de 30 minutos para preparar y cocinar. Tuve que intentarlo por mi cuenta. El resultado: Un platillo de mole sabroso con la cantidad perfecta de chocolate picosito. Una de las mejores recetas con la que he experimentado y ahorrado bastante tiempo.

Enmoladas de la Abuelita
Tiempo de preparación: 20 minutos
Tiempo de cocción: 5 minutos
Ingredientes:
1 taza de agua
1 paquete (3.98 onzas) de Sazonador MAGGI Sofrito
2 chiles chipotle en adobo de la lata, sin semillas, si se desea
2 cucharadas de salsa de adobo de lata de los chiles chipotle
1 cucharada de MAGGI Caldo Sabor a Pollo granulado
1 tableta (90 gramos) de NESTLÉ chocolate ABUELITA
2 cucharadas de aceite vegetal
8 tortillas de maíz grandes
2 tazas de queso panela desmoronado
Semillas de ajonjoli tostadas
cebolla picada
cilantro fresco picado
Instrucciones:
Coloque agua, Sofrito, los chiles chipotle, salsa de adobo y el caldo en una licuadora. Mezcla hasta que quede suave.
Coloque la mezcla en una cacerola grande. Agregue el chocolate Abuelita. Cocine, revolviendo con frecuencia, a fuego medio–bajo durante 5 minutos o hasta que el chocolate se haya disuelto completamente y la salsa haya espesado. Ponga a un lado, mantenga caliente.
CALIENTE el aceite en una sartén grande. Fria las tortillas una a la vez por 2 a 3 segundos para ablandar. Escurra las tortillas en servilletas. Sumerja las tortillas en la mezcla de chocolate Abuelita.
RELLENE las tortillas con queso, enrolle y colóquelas en un plato. Vierta la salsa restante sobre las tortillas. Espolvoree con semillas de ajonjoli, cebolla y cilantro y sirva inmediatamente.
Rinde 8 porciones
